In Honor of Grandpa

My grandpa was a wonderful man. My grandmother passed away and left him alone for twenty some odd years. Grandpa always insisted on celebrating holidays at his house where he continued to carry out the same traditions my grandma started. My grandpa was a wonderful man and he made a wonderful Coconut Cream Pie. It was always a special treat he would make whenever we would visit. So, in honor of grandpa this Thanksgiving let’s all eat pie…Coconut Cream Pie.

 

Coconut Cream Pie

1/2 cup flaked coconut 1 unbaked 9-inch pie shell

3 eggs, slightly beaten

1/4 cup sugar

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon vanilla

1/8 teaspoon salt

1/2 cup half and half

1 1/4 cups milk

Spread coconut evenly in bottom of unbaked pie shell; set aside. In separate bowl, beat eggs slightly; add sugar, cinnamon, nutmeg, vanilla, and salt. Mix well. Mix in half and half. Add milk and mix thoroughly. Pour over coconut and bake at 400 degrees for 50-55 minutes or until knife inserted comes out clean. May be served warm or chilled with whipped cream. I like mine chilled since that’s the way grandpa did it. Enjoy!
